Meet Zak Kolbas

Zak Kolbas is a seasoned hospitality consultant and bar management expert with over a decade of experience in the restaurant and bar industry. Known for his hands-on approach and expertise in creating upscale, efficient bar programs, Zak specializes in developing customized solutions that drive excellence in both product and service.

His journey began as a bartender, where he cultivated a deep understanding of quality mixology and customer experience, quickly rising through the ranks to manage bar operations for some of Dallas's top-tier restaurants.

As the Managing Director at Behind The Stick, Zak brings a unique blend of strategic insight, operational efficiency, and hospitality-driven training to help clients elevate their bar programs from concept to execution. Passionate about education and sustainability in hospitality, he’s dedicated to transforming bars into places where staff are empowered, guests feel at home, and service consistently exceeds expectations.
